Glyphosate is the world's most widely used weed killer. It's sprayed on wheat, oats, corn, soybeans, and many other crops. Traces of it remain on the food made from those crops: bread, cereal, oatmeal, crackers, and snack bars. Most people in developed countries have measurable glyphosate in their urine.
Metabolic syndrome is a cluster of problems: belly fat, high blood sugar, high blood pressure, and abnormal cholesterol. It affects more than one in three American adults and raises the risk of heart disease and diabetes.
What the research says
A 2026 scoping review in Environ Health Perspect pulled together both human population studies and lab experiments to see whether glyphosate contributes to metabolic syndrome.
The evidence pointed to several pathways. Glyphosate disrupts gut bacteria, which play a key role in controlling blood sugar and fat storage. It also interferes with insulin signaling, making cells less responsive to the hormone that keeps blood sugar in check.
Animal studies showed glyphosate exposure led to liver fat accumulation and changes in how the body processes cholesterol. Human studies found that people with higher glyphosate levels in their urine had higher rates of metabolic problems.
The review noted that most people are exposed to small daily doses over years, not large single doses. This chronic, low-level exposure is exactly the kind that's hardest to study but may matter most.
Choosing organic versions of high-residue crops like oats, wheat, and legumes can lower your glyphosate intake. Washing produce helps, but glyphosate is absorbed into the plant, so it can't be fully rinsed off.
