What's actually in it

Tartrazine, listed as Yellow 5 or E102 on labels, is one of the most widely used food dyes in the world. It makes chips, candy, sport drinks, mac and cheese, and cereal look bright yellow or orange. It's also in some medications and vitamins. Kids consume a disproportionate amount because the foods it's in are marketed directly to them.

What the research says

A 2026 study in J Hazard Mater fed tartrazine at levels relevant to daily human intake and tracked what happened to brain function over time. The chronic exposure altered behavior, reduced brain function, and disrupted normal neurological activity.

The study found that tartrazine crossed into brain tissue and interfered with normal signaling. Animals exposed to the dye showed changes in how they moved, how they responded to stimuli, and how they interacted socially. The researchers concluded tartrazine poses a real risk to brain health at everyday exposure levels.

This isn't the first warning sign. Earlier research had linked tartrazine to hyperactivity in children, which led the European Union to require warning labels on foods containing it. But many countries, including the US, still allow it without warnings.

Reading labels is the main defense. Look for "tartrazine," "Yellow 5," or "E102" in the ingredients. Many brands now make dye-free versions of popular snacks. Natural color options like turmeric and annatto give the same yellow color without the synthetic chemistry.
