What's actually in it
Foods processed at high heat (fried, grilled, charred) contain acrylamide, heterocyclic amines, PAHs. Ultra-processed foods also carry food dyes, preservatives, and plasticizer residues from packaging. Collectively these are food and environmental genotoxins that damage DNA and push cells into senescence (cellular aging).
Senescent cells don't do their job well and release inflammatory signals that age the whole body faster.

A 2026 review in Int J Mol Sci on cellular senescence triggered by food and environmental genotoxins mapped how dietary exposures drive cellular aging. The review identified specific mechanisms for acrylamide, PAHs, and other common food genotoxins. Regular consumption of affected foods measurably increased senescent cell accumulation.
Anti-aging through diet: minimize fried, grilled, and charred foods. Boil, steam, bake at moderate temperatures to reduce genotoxin formation. Eat colorful fruits and vegetables rich in antioxidants. Whole foods over ultra-processed. For grilling specifically, marinate meat before grilling (reduces heterocyclic amine formation), don't char, and flip frequently to avoid intense heat contact.
